Tired of the usual chicken salad? Here we are with a delicious recipe with only 3 ingredients: chicken, avocado (Sicilian, please) and lime juice, are enough to prepare a fresh salad for these summer days.
Following Sara Foschini’s directions and using only these 3 ingredients, it will be ready in a few minutes.

Procedure
- Heat a non-stick pan and cook the slices of chicken breast without adding fat. After a few minutes add salt and then turn the slices so that they are well cooked and golden on all sides.
- Meanwhile, squeeze half a lime to get the juice. Make sure there are no seeds.
- Divide the avocado in half, remove the stone and obtain the pulp, being careful not to damage the peel because we will need it later.
- Collect the avocado pulp by the touch in the blender glass, add the lime juice, salt and a drizzle of oil while blending: you will have to obtain a smooth and velvety cream. You can also add a grind of pepper, or a slice of fresh chilli, according to your tastes.
- Drain the chicken, which in the meantime will have cooled down, and collect it in a bowl.
- Season it with the avocado cream, correcting, if needed, with salt, pepper and a little lime juice.
- Distribute the chicken and avocado salad in the two “shells” of peel that you have kept aside and decorate as desired with a slice of lime and serve the rest of the cream in a separate bowl.
- To accompany and add a crunchy touch, you can prepare croutons by doing the following: cut the sandwich bread into triangles, brush them with a brush dipped in extra virgin olive oil and brown them in a non-stick pan on both sides, until that will not have turned golden.
