In an interview with Cromos Magazine, Chef Diego Ernesto Canchon tells us how to prepare carrot spheres, tartare with this ingredient and glazed carrots. Ready to make your mouth water?

Carrot spheres

For 4 people

Ingredients

– 2 large carrots

– ½ cup of Parmesan cheese

– 1 cup of flour

– 2 eggs

– Room

– Nutmeg

Preparation

– In a bowl, grate the carrots and mix with the Parmesan cheese.

– In another bowl, mix the flour with the egg, a pinch of salt and a pinch of nutmeg. You can include other spices that you like

– Integrates both mixtures and makes medium-sized spheres.

– In a baking tray, covered with greaseproof paper, place the spheres.

– Bake for 20 minutes at 180 ° C.

– Let cool a bit and enjoy these spheres.

Glazed carrots

For 4 people

Ingredients

– 1 lb baby carrots

– 2 tablespoons of honey

– 1 tablespoon olive or canola oil

– 2 teaspoons Dijon mustard

– 1 tablespoon chopped fresh parsley

– ¼ teaspoon salt

– 1/8 teaspoon pepper

Preparation

– In a pot or saucepan, bring water to boil.

– Add the carrots and make sure the water covers them completely.

– Cover and simmer for 15 minutes or until tender.

– Drain the carrots and reserve.

– In a medium bowl mix the honey, mustard, oil, salt and pepper. Stir well until you get a homogeneous mixture.

– Add the carrots and stir until they are well covered in the sauce.

– Add the profile and mix again.

– Serve and feast on these glazed carrots.

Carrot tartare

For 4 people

Ingredients

– 800 gr of carrot

– 100 ml of olive acceptance

– 2 tablespoons mustard

– 2 egg yolks

– 1 teaspoon capers

– 2 pickles

– 50 gr of onion

– 8 chives

– 2 eggs

– A splash of tabasco

– 4 toasts of bread

– Room

– Pepper

Preparation

– Peel and cook three-quarters of the carrots.

– From the cooked carrots select half and puree them. The other half chop it finely and reserve.

– Finely chop the raw carrots, onion, chives and capers.

– Cook the 2 eggs and when they are ready, separate the yolks from the whites. Chop both finely.

– Mix the 2 raw egg yolks with the mustard and olive oil as if it were a mayonnaise.

– Combine this mixture with the puree, the chopped cooked carrot and the raw carrot.

– Add salt, tabasco and pepper.

– Add the rest of the ingredients and mix.

– Plate and accompany with the toast of bread.
